If you read about stockpots, be they aluminum stockpots or stainless steel stockpots, on the web or in manufacturers publicity. you d be forgiven for thinking that all was not clear as to what to buy with many arguing one way and others arguing another. So what is the reality? What should one believe?

The reality is that stockpots have been with us in the USA since the early pioneers ploughed they way across forbidding frontiers and since those times many a way of cooking with stockpots have evolved.

You ll have read that: well-designed stockpots are tall and narrow, yet we see many stockpots with a base that is slightly wider than the height? And then again the experts tell us that there isn t any difference to the results of our cooking whether we use tall and thin or squat and fat pots!

The facts are that stockpots come in many guises, from small ones at 8 quarts, right up to 162 quart commercial units. They come in stainless steel, aluminium, cast iron and many variants in between with all sorts of coatings. Usually they also come with two side loop handles that you must ensure are well made as you re going to be handling a heavy pot when its full. You ll also find squat stockpots, these are usually called soup pots or sauce pots .

Stockpots are essential for anyone wanting to make good quality stock or soup because you simply have to have the space to put in all the ingredients and to have a pot that is ideal for simmering, But stockpots can be used in ways that go much further than this. This argument is now highly questionable, except of course by those selling narrow-tall stockpots. Today many variants in the shape and size of stockpots arise. Which shape and size is best is simply down to you. Don t be put off by the heavy handed marketing dictats of some manufacturers. Go for quality and the size and shape that makes good sense to you.

Often your own storage arrangements can have an over riding importance as stockpots can be bulky, especially as you get into the larger sizes. Be sure, just for boiling water a cheaper pot may be fine for a short time, but for soups and sauces, deep frying and making regular use of your pot you really should make sure that you invest in a good one. Stockpots have been used for generations to slowly simmer meats and vegetables with the objective of creating a tasty stock. American pioneers used their stockpots daily to make best use of all parts of the animal. Today our use of stockpots has become evermore adventurous, Stockpots are coming into their own in wholly new ways as we become ever more creative in our style of cooking and inventive in the recipes we try out.
